The different colors
Because a chef is nothing without good front-of-house staff, a good product, good apprentices and a good relationship with his customers, the Disciples Escoffier have, over the years, introduced different colors of sashes to honor and distinguish the different trades.
Definition of the different colors of the Disciples Escoffier sashes :
Red Scarf
Set up in 1964 under the presidency of Jean Ducroux.
These are mainly cooks and pastry chefs. But also all those with a CAP and/or more than five years’ experience in the field.
To date, they represent over 70% of the Association’s members.
Blue Scarf
Set up in the early 90s under the presidency of Henri Ricottier.
These are the personalities who make gastronomy and the Escoffier Spirit shine. They include sales people, journalists, institutional partners, political figures and simply Epicureans and Gastronomes.
Lie de Vin scarf
Set up in 2012 under the presidency of Régis Marcon.
These include all the professions in the restaurant and service sector, such as sommeliers, maîtres d’hôtel, restaurant managers and chefs de rang.
Throughout his career, Auguste Escoffier’s association with César Ritz enabled him to develop his skills in the culinary arts, in addition to his vocation as a chef.
Green Scarf
Set up in 2007 under the presidency of Jean Pierre Biffi.
These talented producers include farmers, breeders, market gardeners, cheesemakers, fish farmers, growers, winemakers…
For Auguste Escoffier put the product back at the center of the plate. He was the first to emphasize the value of the season, with a dual focus on taste and economy. Inaugurating what we do today to respect our customers and the environment. He creates recipes by stipulating the origin of products.
Orange scarf
Set up in 2014 under the presidency of Régis Marcon.
These are the young hopefuls of the profession.
Transmission is one of the main objectives of the Disciples Escoffier. For this reason, promising young hopefuls in cuisine or service are awarded this sash every year. Whether after taking part in a competition or for their actions with the Disciples Escoffier. They are then placed under the responsibility of the delegation president for 5 years, to help him or her succeed. If, at the end of these five years, they have demonstrated their determination and professionalism, they will be awarded the Disciple Escoffier sash (Red or wine lees) and thus be recognized by their peers as Disciples Escoffier.
President's Scarf and Medal
Set up in the early 2000s under the presidency of Jean Claude Guillon.
They distinguish the Chairman from a delegation, so that during events or trips, the Chairman is recognized as the head of his delegation.
Presidents are responsible for carrying out the objectives and values of the parent association.
