The Escoffier Museum of Culinary Art and the Disciples Escoffier

Auguste Escoffier’s main preoccupations were passing on and sharing. During his exceptional 60-year career, he never stopped training future generations (some 2,000 chefs). He wanted his legacy to be part of the evolution of gastronomy.

Today, two associations are helping to anchor this culinary heritage in our society.

  • The Escoffier Museum of Culinary Art preserves and transmits the gastronomic, historical and cultural heritage bequeathed by Auguste Escoffier.
  • The Disciples Escoffier International has been bringing its knowledge to life around the world, through its 48 delegations and 10,000 ambassadors for 25 years.

A Library dedicated to Gastronomy

Regularly replenished by new purchases and donations, it boasts 3,000 works from the 17th century to the present day, from Cuisinier François de La Varenne (1650) to Alain Ducasse’s Grand Livre de Cuisine, including Naucrates’ Le Banquet des Deipnosophistes d’Athénée (in Greek) and Edouard Nignon’s highly sought-after L’Heptameron des Gourmets (1919 edition).
Not forgetting, of course, all the writings of Auguste Escoffier in their original editions. The documentation center is open by appointment to enthusiasts, students, researchers and enthusiasts of all nationalities.
