It all begins with a vision. That of an exceptional man, Auguste Escoffier, an outstanding chef and dedicated humanist who established himself as the true ambassador of French gastronomy throughout the world.

Once upon a time
Auguste Escoffier.

An innovator, he revolutionized working methods in and out of the kitchen, imposed fixed-price menus, designed new equipment, put the product back at the center of the plate and promoted the work of French producers by encouraging them to export. Auguste Escoffier was also an avant-garde thinker, 100 years ahead of his time when it came to recycling and sharing resources. And of course, he is still the author of the chefs’ bible, the famous Culinary Guide, with its 5,000 recipes. In short, without him, gastronomy would not be what it is, nor what it will be.
